Roasted Curried Cauliflower
This versatile dish can be eaten right off the pan, or used as a topping for a beautiful salad, like in the photo, turned into wraps, or added to any number of tasty eats. You can easily double this recipe for a larger crowd.
- 1 head cauliflower
- 1 tablespoon olive oil
- 1 tablespoon curry powder
- 1/2 tablespoon cumin
- 1/2 tablespoon coriander
- fresh ground salt and pepper to taste
- Preheat oven to 400 degrees. Line a baking sheet with parchment paper, if desired. Trim cauliflower leaves and pull cauliflower apart into bite-sizes pieces. In large bowl, toss cauliflower with olive oil and spices. Spread cauliflower onto prepared baking pan and roast for 20 minutes. remove pan from oven to turn cauliflower and roast for another 20 minutes or until golden and tender. In the picture for this recipe, I placed a bed of salad greens tossed in olive oil and lemon juice on a serving tray, then topped it with this roasted cauliflower, drizzled a sauce of yogurt, cumin, salt, and lime juice on top, and surrounded the pan with mini naan to serve at a family Christmas meal.
