Cornmeal Pancakes
This pancake variation resembles a corn muffin, but in pancake form. It is delicious served with bacon and pomegrante, with maple syrup, sorghum, molasses, honey, or just plain. It also makes delicious "buns" for a breakfast sandwich!

Ingredients
- 1 cup flour
- 1 1/2 cups cornmeal or polenta
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 Tablespoon sugar
- 1 teaspoon salt
- 2 eggs, beaten
- 2 cups buttermilk
- 1/4 cup butter, melted
Instructions
- Combine dry ingredients and mix well. Stir in remaining ingredients just until incorporated. Fry on hot griddle until browned on each side. Makes 14-16 pancakes.
