Dirty Cheeseburger Soup

A family favorite, I call this comfort soup "dirty"because I use organic vegetables and clean them well, but do not peel the potatoes or carrots. You can peel them if desired. You can also make this gluten free by using the GF flour of your choice. I have not tried a vegan version of this soup. Lastly, you can use ground beef or ground sausage, but our family, hands down, prefers ground turkey for this recipe!

  • 4 cups potatoes, cleaned and diced
  • 1 cup celery, chopped
  • 1 cup carrots, cleaned and diced
  • 1 cup onion, sweet is yummy
  • 2 teaspoons dried basil
  • 1 teaspoon dried parsley
  • 2 cloves fresh garlic minced
  • 4 cups chicken stock
  • 4 Tablespoons butter
  • 1/2 cup sour cream
  • 2 cups shredded cheese
  • 1 lbs. ground turkey
  • 1 cup milk maybe more
  • 1 cup flour scant
  • salt and pepper to taste

Optional Toppings

  • 1 lbs. bacon fried and crumbled
  • shredded cheese
  • fresh snipped chives


  • Brown meat and set aside. In a large pot, melt butter over medium high heat and sauté vegetables for about 5 minutes. Add chicken stock and a little extra water if needed to cover the vegetables by about 1 inch. Bring to a boil and cook until vegetables are tender. Add sour cream, cheese, herbs, and browned meat. Combine milk and flour. Add to pot, stirring until thickened.
    Serve as is or with desired toppings.
